A native of Greenville, Texas, East graduated from Southern Methodist University in 1923 and earned her master's degree from the University of Wisconsin in 1927.  In college she participated in basketball and field hockey.

Ruby came to ISU in 1927 as an assistant professor in Physical Education. Her time at Indiana State was spent in the advancement of the P. E. curriculum and her devotion to archery. She was an Honorary Life Member of the National Archery Association and the Hoosier State Archery Association.

In 1952 and again in 1967, East traveled abroad in Europe promoting and covering archery competitions. Her work in the sport was recognized at the First National Sports Festival in Colorado Springs, Colorado.

East was a member of the inaugural Indiana State Hall of Fame Class first inducted in 1982.
